The grapes come from the estate-owned vineyards adjacent to the winery in the Postuman area, a hamlet of Mezzane di Sotto.
SOIL TYPE:
Limestone and clay, altitude 280 meters above sea level.

70% Corvina, 20% Rondinella, 10% Corvinone
HARVEST:
Hand-picked grapes, immediately processed.
VINIFICATION and AGING:
The fully ripened red grapes are hand-harvested, destemmed, and not crushed. Spontaneous fermentation occurs with whole berries to enhance the aromas of wild berries and spices typical of these varieties, while avoiding the extraction of vegetal notes. It is aged for several months in small steel tanks before bottling. The wine is unfiltered and has a low sulfite content.
DESCRIPTION:
Ruby red color with soft violet hues. The nose is rich, featuring blackberry and raspberry with light notes of violet and white flowers. On the palate, it is dry, bold, and mineral, with lingering red fruit and balsamic notes.
FOOD PAIRINGS:
Our Valpolicella is an easy-drinking wine, perfect for everyday enjoyment. Recommended during an aperitif or a quick break with bread and cured meats, or with traditional Veronese first courses like tortellini or fresh pasta. When served slightly cooler, it pairs well with grilled white fish or shellfish.
